以没食子酸为原料可以合成没食子酸酯类化合物,没食子酸的烷基酯根据烷基碳原子个数可分为低级酯(如甲酯、乙酯、丙酯等)和高级酯(如辛酯、月桂酯、十八碳醇酯等),这些酯类化合物都是性能优良的食品抗氧化剂。20世纪80年代日本已经有用95%的没食子酸和其他助剂组成的抗氧剂G1000、EG-5乳剂和EG-5油剂,特别是没食子酸丙酯为抗氧剂,可用于食用油脂以防腐臭变质。没食子酸丙酯(PG)已在许多国家批准使用,日、美、德、英均有生产。国外大部分水产加工品都改用浸演或喷涂没食子酸作抗氧化剂。
